Hygiene in food production

An assured hygiene status in the business is very important for restaurateurs and food producers. Basic hygiene is part of the duty of care towards guests and customers. Implementing the requirements of hygiene law protects consumers from damage to their health and also the good reputation of the company.

Food provides a breeding ground for microorganisms such as bacteria and is susceptible to germs. To ensure that consumers do not suffer health damage from spoiled food or from allergens, harmful substances and residues in food, food businesses must establish efficient self-control systems for operational hygiene (HACCP concepts).

When guaranteeing food hygiene in day-to-day business operations, speed is of the essence in addition to cost. If germs are discovered too late, there is a risk that employees and consumers will suffer health damage due to hygiene deficiencies. Regular monitoring of known indicator germs is a suitable method for monitoring food hygiene in a business. Possible hygiene deficiencies or contamination can thus be detected at an early stage and further steps can be taken quickly. 

Specifically defined microbiological parameters can be used to determine the hygiene status. These include the total bacterial count, yeasts and moulds, enterobacteriaceae, lactic acid bacteria, staphylococci, E.coli, thermotolerant coliform germs, enterobacteria and clostridia.
